Bonjour, j'éprouve un petit problème lors de la cuisson de mes 2 derniers pain au levain.

Ils se déchirent à la base et la pousse au four commencent très tard + de 5 minutes.

Je démarre la cuisson à 230º pour les 5 premières minutes et à 200º pour terminer la cuisson.

Je me demande pourquoi j'ai ce problème. Je n'avais pas ce problème avec mes pains à levure et à la poolish.

j'enfourne plus chaud sur ma pierre (270°) et je baisse au bout de 5 minutes à 220°.
Si ton pain s'ouvre en bas, c'est peut-être que les incisions en haut ne sont pas assez profondes ? comment incises-tu ? comment sont les grignes ?

Mes grignent sont assez profonde que je fait avec une lame de rasoir.
J'utile souvent le style quadrillé "lozange".

Ton four n'est pas assez chaud je pense.
